At first I was thinking that him executing a martial art after being beheaded was really straining credulity, but it does make some sense on second thought. Many instinctual actions and reactions in our body are actually processed in the nerves in our spinal chord, circumventing the brain entirely and therefore occurring faster than we would be able to consciously think of them. If we accept that MC trained his martial arts to the point that even such complex actions became completely instinctual, then it actually kinda makes sense.
