If i understand the physics, water and hot oil basically the water instantly evaporates expanding 1,500x, which also shoots out oil in basically small enough particles aerosolizing the oil which can then be set on fire as they are small enough.
Wicks in lamps and candles burn the aerosolized particles around the wick, not the wick itself.
