What on earth makes you think he would have been given the choice to not sell it? When a noble sees a peasant has something valuable, it then belongs to that noble. If the peasant refuses, they get killed.
The MC of many isekai style mangas live in worlds where the Nobles are for the most part noble, and the Church is a force for good. That is NOT the situation in reality and has historically never been true in real life. In that sense, this MC is living in a world more like ours, and he has to step veeery carefully.
As the peddler points out here – most peasant villages are teetering on the brink of starvation. Thanks to his magic, MC lives in one that is not; and that alone is suspicious enough to bring down the wrath of the nobility upon a village that is “obviously hiding taxes and other wealth.”
