tl;dr I’m hiding this behind a spoiler. Just soy sauce miso ravings.

Processed rice, like wheat and corn has a high probability of causing type II diabetes in a modern (lardbut) diet aka witer that wite rice. Unprocessed is better in a less lardly diet.

Till the early 1900s fermented products in Japan had serious problems causing various diseases. It wasn’t till the 1950s that this was eradicated.
Miso, soy sauce, natto, saki etc are only possible to eat safely in a medievel fantasy world if magic can clean it up or under strong government regulation.

FWIW the no rice variants taste better. I prefer tamari that is 100% soy, no rice (or virtually no) and damn well no wheat. The same for miso, I prefer hatcho miso, sadly difficult to get in the US at reasonable cost. It has to be naturally brewed/fermented under strict government scrutiny IN JAPAN. I do not want hair sauce made in china or worse.
