Acorn flour’s actually pretty damn nice, we have a white oak on our property that produces a ton of ’em every year, just have to get out there quick enough before the squirrels and worms get them. Crack open the acorns and leach them a couple times to remove the tannins, then grind it all down into flour and use it for anything that catches our fancy. Acorn bread has a wonderful flavor to it, a sort of subtle sweetness almost like maple syrup.
