So now that he doesn’t have to worry about gaining MP, he should start stacking all his points into DEF/AGI

dude.. I feel bad but, if you really wanted to work as a hunter of some sort, then just work harder, challenging tougher dungeons is good but, know your limits first, if you think the dungeon is too easy and doesn’t give you XP then that means you still have the capacity to grow stronger..
