Need to make kraut. Especially with how much salt he has. Shred the cabbage and boil with salt. Pour the cabbage, salt, and water all into large jars or casks and seal. Takes two months to ferment (best to leav it in an outbuilding for this step ). Then remove from the pots and place in smaller jars for storage and use. Seal the jars and place them in larger pots partially submerged in water. Boil again for good measure.
Great way to preserve cabbage for winter. The fermentation only increases the nutritional value, especially vital for colder months
