Technically, there’s also humans on a grander scale. Usually you hear about the generics: Elves, with long life spans but low procreation rates; Dwarves, short and skilled in blacksmithing and other matters of mining and gold; Dragons and Wyverns, powerful avians, etc. In pretty much all of those stories, humans are dominant because they multiply very quickly and are adaptable to varied environments.

Mice are used, also because they have a lot of shared DNA with humans, so what we test on them is fairly similar to testing ourselves. Not 100%, of course.
