Something only be done by someone who hasn’t lived through food scarcity. My grandma who lived through after WWII food scarcity in Germany would have never poured the grease away as it can be used in a variety of dishes later on.

A few examples:

You can put it on bread, either pure or as replacement for butter.
You can fry food (e.g. vegetables) in it and give it a nice umami taste with hints of the bird (I think the rock bird might be an oversized goose).
