That’s the same way my family do it! We mainly fry egg with fish sauce instead of soy sauce though, I prefer using soy sauce when I eat alone.

If you want mixed eggs with pieces, it’s best to not mix them before actually, you mix them in the pan and go very light with the mixing, more just light spoon flipping to get the cooked stuff on top of the uncooked.
What’s your favorite thing to mix with eggs? I like diced caramelized onion and bacon bits.
