I don’t know if the writer has only done partial research or it was a blooper or just throwing ideas out there. First of all, the sharper the knife the better for butchering and skinning and tanning (although tanning can also be used with a rectangular bar edge, depending if you want to fine sharpen the knife more or not). trying to cut sinew, muscle fibre and cartilage with a blunt or semi sharp knife or even a poorly sharp knife is like trying to saw through wood and steal with a hack saw, not fun especially a whole animal. As for taking on apprentice blacksmith, no one takes on an apprentice unless they have a life time contract or know that they will move weeks upon weeks away so when they open a shop they will not be competing with the master but can still send the difficult jobs to said master. This is a cardinal rule all blacksmiths follow so that they do not compete against their own skills by a younger, stronger and more nimble person. Dwarves abide by this rule stronger then anyone (unless you show the dwarven smith something special in some way, to become accepted), so it will be interesting how this manga portrays this rule if at all.
