About Tapenade: it is a condiment/spreadable from the South East of France
It is a paste made mostly from green OR black olives and anchovies.
Good quality contains no less than 80% olives, and anchovies for the remaining part.
Unfortunately you can also find industrial junk versions, mostly made abroad, containing 50% or less of the nominal ingredients…
I once found (obviously NOT bought) something called Tapenade, containing around 30% olives, no anchovies, and some fatty stuff for the remaining 70% (in a well known in Europe, supermarket of cheap stuffs brand).
