I think Jinjo realized his mistake and that he was going down the wrong path but he simply went to far to return now, so in a final attempt to punish himself for what he did, he provoked Mister Jang to the point where he couldnt held back anymore and use deadly martial arts on him , and i think Mister Jang already knew his intentions which explains this scene of him which goes insanely hard for no reason btw
