One of the biggest advantages of a crossbow over a bow is it takes significantly less skill to use, so you could train a lot of crossbowmen quickly and they could be replaced easily. When you lose a skilled bowman however, it could take years for his replacement to reach his skill level.

No, make hand cannoners on cavalry. Brother, I know age of empires 2 to know how strong that combanation is, you take the disantvantge of cannons of being slow and you know, weak, and put it on a horse, thus making them faster. Hit and run tactics really.
