Things about agriculture:
The first agricultural revolution started in the neolithicūm. Likely in the middle east. And within a thousand years (that’s how long it needed to travel to reach everywhere) the world population skyrocketed to 10 times the starting population of fifty thousand humans. (50k to 500k)
Before that the world population stayed stable for several ten thousand years.

Wood for construction also needs to be dried and technically one could use the process that is used to make aero gels. (Nobody does because it’s too expensive and rather unsuited for large timber.
However wood normally deforms and cracks due to uneven shrinking while drying.
And that process is the only one know to not do that.

1. Replace the water with alcohol (did forget if ethanol is used or if isopropanol can be used). It’s just soaked in it and makes the water come out
2. Put it in a pressure safe container.
3. Replace the air carefully with CO²
4. Fill the inside with liquid CO². That will dissolve the alcohol. After a few rinsings the alcohol is now replaced with liquid CO²
5. Go supercritical. (No the CO² is no longer liquid but also not really a gas)
6. Release the gas.

Unlike freeze-drying which still has shrinkage or expansion, this process doesn’t change the volume, but removes all water.
And it only takes days instead of months (with the replacement of water with alcohol taking the longest, the rest is done in a few hours)
