The fact in its final form it copy’s / mimics your base stats / fighting style is an interesting feat from the boss but begs the question; does that mean it just copied his curse, which could definitively mean he just copied his very low defense. All they need is to attack all at once and get a promising hit in which could get them the win / defeat of this boss 
It copies the person with the matching gem everyone knows how to beat this type of boss trade dance partners
